Giving Thanks</div>
<div class="separator" style="clear: both; text-align: center;">
My husband told me last night he heard it said like this. "What if you were only able to have what you gave thanks for the previous day?"</div>
<div class="separator" style="clear: both; text-align: center;">
Makes me take a hard look at what I give thanks for on a daily basis.</div>

Give me a chance to explain why I break the rules. We were together as a family playing mini golf and on the menu was greasy, sweet and yummy pizza. Don't get me wrong, I love pizza. I just can't have it all the time. My choices that night were pizza or the celery I had in the car. I asked my husband for the keys to get my celery. He said, "did you see the sign? The sign clearly stated in large bold letters, <span style="font-size: large;"><strong>NO OUTSIDE FOOD. </strong></span><span style="font-size: small;">I said to him, I need my celery, and if they ask I will tell them why I am eating celery and drinking water tonight. Don't get me wrong, I'm not a food snob, but when my kids sit down to eat, I want to eat too. I'm just trying to find balance in what I eat. </span></div>
<div class="separator" style="clear: both; text-align: left;">
The facts are, <span style="font-size: small;">I use celery, exercise and watching what I eat to help keep my high blood pressure in check. Simple as that. If I stop any of these things, my blood pressure goes up, jeopardizing my health. </span><span style="font-size: small;"> </span></div>
<div class="separator" style="clear: both; text-align: center;">
<br /></div>
<div class="separator" style="clear: both; text-align: center;">
<br /></div>
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjqn8qVH48L50SfgdvEw0nrJhPYC6ewvGDRM0oBW-6PIUyS43KHXYgdIfHJ67SLmu6dJIGPuxGuDLGDqBipOZXJAkLUhidXhYFp07ZK7ZUSIKH04l6TFmpF5sn5ETjC-TbjVezx5EVSpp4/s1600/DSC_1315.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" closure_lm_887981="null" height="213" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjqn8qVH48L50SfgdvEw0nrJhPYC6ewvGDRM0oBW-6PIUyS43KHXYgdIfHJ67SLmu6dJIGPuxGuDLGDqBipOZXJAkLUhidXhYFp07ZK7ZUSIKH04l6TFmpF5sn5ETjC-TbjVezx5EVSpp4/s320/DSC_1315.JPG" width="320" zsa="true" /></a></div>
I believe with all my heart that food can be medicine. Instead of showing up to dinner with my pill box for the rest of my life, I'm trying to find balance with what I can control. How many vegetables I eat, is under my control. I named this blog revive. I'm trying to help remind myself to revive what is good for me, even if I have to break the eating establishments rules sometimes. <br />
Coming up with guidelines for myself has helped me find balance. Cheers to balance. try new recipes.<br />
I have been very intrigued and curious about Indian food. I decided to see if I could create my own Garam Masala. You can buy this in the store, but, I just wanted to have a little bit. I didn't measure I just added the following spices together and toasted them in a skillet with a little bit of oil. I used it in a chickpea curry. <br />
cinnamon <br />
cloves <br />
nutmeg<br />
pepper<br />
cardamon<br />
Surprisingly, I had all these in my spice organizer. The only one that may not be in your spices is cardamon. <br />
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEh4obV73cBkCfd686eTjqqU0ugKwqwVleNP3u-_jHg2aAIO5-ItTMFqvM3-0uaZpqaWjwgsddzW_AOI-8NRZa02a5IQVlX9fg6oBrukvcT0kei-I88iST8L6EdkiRnwscQg0gKWn-wkrRw/s1600/DSC_0992.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" closure_lm_727866="null" height="213" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEh4obV73cBkCfd686eTjqqU0ugKwqwVleNP3u-_jHg2aAIO5-ItTMFqvM3-0uaZpqaWjwgsddzW_AOI-8NRZa02a5IQVlX9fg6oBrukvcT0kei-I88iST8L6EdkiRnwscQg0gKWn-wkrRw/s320/DSC_0992.JPG" width="320" zsa="true" /></a></div>
I use it to add flavor to oatmeal, rice and use it in a spice cake I make. Now I use it to make Garam Masala. A little bit goes a long way. It has a strong zing, not hot spicy, but, smoky flavor to it. <br />
I'm constantly learning new things about cooking, I hope this helps stir some interest into your cooking at home too.<br />

I love to use what I have. Grandpa gave us pumpkins that he grew in his garden. We carved them right before
the 31st of October. I then roasted the large pumpkin and pureed it on the next day. This process isn't for those who don't like to get a little messy. I dove right in peeling the pumpkin skin off with my hands and using my food processor helped speed things up. For some reason, I find great satisfaction in processing food. Especially, when I know where the food comes from. It feels pure, and oh, does it taste good. I ate a whole slice of pumpkin hot from the oven, with no salt or sugar. <br />

<br />
I made pumpkin bread and muffins and sent them to school with my son for his teachers. I feel blessed and want to pass it on. I snapped this photo very quickly as he was leaving for school. Sharing just a small gesture like pumpkin bread, I hope it will speak to my children to share God's bounty and blessing with others. I also, love the thought of getting a gift on a non holiday. Teachers get gifts at Christmas and the end of the year. Why not let teachers know you are thankful all year? Why not let your family know you are thankful for them all year long with small blessings? A personal challenge for me this year is to express that thankfulness. <br />
I keep markers, paper, stickers and specialty napkins right where I make my children's lunches. I try and send notes quotes or Bible verses with them all year long. Confidence in my opinion is birthed from knowing that you are loved and supported. I appreciate that my mother made me feel supported and encouraged in all my interests. <br />
Revive, all things pumpkin and thankfulness. <div class="separator" style="clear: both; text-align: left;">
I took a very mild delicata squash and added it to my white sauce over noodles. I have also added butternut squash to my Mexican soup. </div>
<div class="separator" style="clear: both; text-align: left;">
I went to my daughters kindergarten classroom and read the book "Sophie's Squash." It is about a little girl who takes the butternut squash she got a a farmers market and makes it her playmate. She then plants "her"and waits. Then at the end of summer gets two more playmates. It is such a cute book. Just like the girl in the book I'm also all about squash this time of year. I try to incorporate it 2-3 times a week. Acorn, butternut, delicata, spaghetti squash are also just great roasted in the oven and eaten with and pepper. I hide them in dishes to get my family to eat them. I find it is worth the time to roast them. </div>
<div class="separator" style="clear: both; text-align: center;">
I love squash! I put it on my mantle.<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhn3VTxuwXDw-s4LwSQeMM-BbFoyaaE8xLehG7F303OJHgnFwyNtg2RLVPaWO8Rre8Ltj4vMEvFsOYKLNqhWP6ralBkI6koabthA249UJ_X6gV3OD-U6raY1VgYHRSGXgphyphenhyphen51tvZGEEjY/s1600/DSC_0702.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" closure_lm_436804="null" height="213" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhn3VTxuwXDw-s4LwSQeMM-BbFoyaaE8xLehG7F303OJHgnFwyNtg2RLVPaWO8Rre8Ltj4vMEvFsOYKLNqhWP6ralBkI6koabthA249UJ_X6gV3OD-U6raY1VgYHRSGXgphyphenhyphen51tvZGEEjY/s320/DSC_0702.JPG" vsa="true" width="320" /></a></div>

The smell of crisp leaves, fog and scones baking in the oven are great scents of fall. For this special tea for my daughters teacher, I kept it simple. Spice tea and chocolate chip scones. <br />
Sitting around a table and sharing a cup of tea is a small celebration. For this particular day we wanted to celebrate and thank her teacher. Taking a moment for tea is warmth for the body, it also helps me to take a moment to revive for the day. My youngest child has gone to school and now I'm back to blogging. Tea in the morning, tea in the afternoon. It is quiet in the house and I feel like I can concentrate. I'm making time for tea this fall. I've been a stay at home mom for 13 years and love it. Some of my other loves are being in the kitchen and writing. Hence, I'm making time for blogging.<br />
<br />
<strong><span style="font-size: large;">Rose Hip Tea</span></strong><br />
I have been collecting Rose Hips on my morning runs and walks. I combine them with an already favorite tea bag and steep for 10 min. It makes a beautiful colored tea.<br />

The definition from the Dictionary is <em>The ripe fruit of a rose, especially of a wild rose.</em><br />
We have many wild roses near our house. In June the air is filled with rose scent and now in September it is time for harvest. They seemed more plump and more visible than in years past. I decided to give it a try and really like it. The key is to add a tea bag, otherwise it is a little bitter.<br />
Cheers to Rose Hip Tea. <br />

<div style="text-align: center;">
My winter favorites are: </div>
<div style="text-align: center;">
Green Olives</div>
<div style="text-align: center;">
Balsamic Vinegar Dressing</div>
<div style="text-align: center;">
Butternut Squash</div>
<div style="text-align: left;">
Somehow, using these three foods seem to make winter eating, a little bit zestier, a little bit warmer. The green olives are not like tart martini olives, these are from a can and have a milder taste than black olives. </div>
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgSScNbESAXAM0j37KQkixpdKvLYJE3x8lWeLuBMva9OE3no4-rSVgHhBFBidlVXD10BfTZSZ5UGmFof158ZKfdQ8J4OM-jvIwoVZ5kVle3Cj0P_QugXgO46L-iUmnEZMAC-i8KR0Pkq5M/s1600/DSC_1352.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" eea="true" height="213" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgSScNbESAXAM0j37KQkixpdKvLYJE3x8lWeLuBMva9OE3no4-rSVgHhBFBidlVXD10BfTZSZ5UGmFof158ZKfdQ8J4OM-jvIwoVZ5kVle3Cj0P_QugXgO46L-iUmnEZMAC-i8KR0Pkq5M/s320/DSC_1352.JPG" width="320" /></a></div>
<div style="text-align: left;">
<br /></div>
<div style="text-align: left;">
I use the balsamic dressing on salad, rice, cucumbers, and for dipping crusty bread. It has a strong taste so, I only use a little bit at a time. My last favorite I have blogged about before. Butternut squash. I like it roasted with some cinnamon and honey on it or I make a savory soup with chicken broth and onion. Either way, I can feel the vitamins and nutrients reviving me. </div>
<div style="text-align: left;">
For me, winter is about finding happy things, lovely things, to share with others. I hope you can find some favorite things that are good for you other than the normal fudge and sugar cookies. My dad came up to share a meal with my family and I had him try the green olives, he said, "these are my new favorite too."</div>
<div style="text-align: left;">
From my kitchen to yours, revive eating well, living well!</div>

Celery is my number one choice. It is crisp and it feels like it cleans my taste buds of wanting to have sugar. <br />
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjqn8qVH48L50SfgdvEw0nrJhPYC6ewvGDRM0oBW-6PIUyS43KHXYgdIfHJ67SLmu6dJIGPuxGuDLGDqBipOZXJAkLUhidXhYFp07ZK7ZUSIKH04l6TFmpF5sn5ETjC-TbjVezx5EVSpp4/s1600/DSC_1315.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="213" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjqn8qVH48L50SfgdvEw0nrJhPYC6ewvGDRM0oBW-6PIUyS43KHXYgdIfHJ67SLmu6dJIGPuxGuDLGDqBipOZXJAkLUhidXhYFp07ZK7ZUSIKH04l6TFmpF5sn5ETjC-TbjVezx5EVSpp4/s320/DSC_1315.JPG" tea="true" width="320" /></a></div>
The way that I get my family to eat it is by making a homemade ranch dip.<br />
<div class="separator" style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none; clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgkzNAMsB-KMZcIXiztvd2RYRmIflvE0znPV0-KGOGBbmyH6OlFw4rqtbUPRk4JwTBdwN0Sn9Hw17ECfeXWbLSf5ydamGs6uqH8IwrtmmCO_Ws5EgUNui6KgdN3kmVxWnNZYmcYb0Wl-QY/s1600/DSC_1164.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="213" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgkzNAMsB-KMZcIXiztvd2RYRmIflvE0znPV0-KGOGBbmyH6OlFw4rqtbUPRk4JwTBdwN0Sn9Hw17ECfeXWbLSf5ydamGs6uqH8IwrtmmCO_Ws5EgUNui6KgdN3kmVxWnNZYmcYb0Wl-QY/s320/DSC_1164.JPG" tea="true" width="320" /></a></div>
<div class="separator" style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none; clear: both; text-align: center;">
<br /></div>
<div class="separator" style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none; clear: both; text-align: center;">
I make it in small batches. With just a few ingredients:</div>
<div class="separator" style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none; clear: both; text-align: center;">
Mayo</div>
<div class="separator" style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none; clear: both; text-align: center;">
Greek yogurt</div>
<div class="separator" style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none; clear: both; text-align: center;">
fresh chopped parsley</div>
<div class="separator" style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none; clear: both; text-align: center;">
Ground pepper</div>
<div class="separator" style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none; clear: both; text-align: center;">
pinch salt</div>
<div class="separator" style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none; clear: both; text-align: center;">
fresh minced garlic to taste</div>
<div class="separator" style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none; clear: both; text-align: center;">
dash of hot sauce</div>
<div class="separator" style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none; clear: both; text-align: left;">
I try to cut clery up in the morning so that when I get hungry, it is already to go. It is also great for taking in the car for a snack, it wards off those temptations. As we start driving through town, my kids start smelling the fast food places, like the burger joints. They instinctively say, "Im hungry." because their noses are leading them. I also try and pack apples when ever we travel to ward off those spontaneous fast food stops. </div>
<div class="separator" style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none; clear: both; text-align: left;">
Packing healthy snacks is a sure way to eat well.</div>
<div class="separator" style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none; clear: both; text-align: left;">
Eat well, live well!</div>

The more I learn about myself the more I realize I do better with a plan. It is hard to escape the holidays without pie being offered. My plan is stick with small portions on dessert. Plus, I am going to just have my favorites and not fall into my usual social eating . I don't really care for egg nog. So, just because it is offered and smells yummy doesn't mean I need to drink all that fat. Rebellion runs deep for me if I feel like I'm being deprived. I think for me, it is more manageable on holidays to think small. On regular days at home, to limit the desserts all together. As, you can tell, I'm giving myself a pep talk before Thanksgiving. <br />
The other thing that helps is to offer to make the fruit pies or crumbles. Yes, they do have sugar, but if they are made at home, I can control how much fat and sugar go into them.<br />
The second part of my plan is that since I'm not cooking dinner, is to exercise twice. I hope the Thanksgiving break is prosperous and full for each of you. Eat well, live well.Rosiehttp://www.blogger.com/profile/00993934607583762537noreply@blogger.com0tag:blogger.com,1999:blog-3989036047554485672.post-50332168841887793042012-11-16T14:55:00.001-08:002012-11-16T14:55:59.988-08:00Energy Bars<div class="separator" style="clear: both; text-align: center;">

Kids seem to be able to tap into this never ending well of energy. Running, squirming, bouncing, dancing, just to name a few moves. I was interested in making some energy bars for my family. I went to allrecipes.com. They have many to chose from. It is so much easier than making cookies and better for them. </div>

I tried two different kinds. The first one consists of pumpkin, oats, sugar, eggs, and a little flour. The second bar has ground up almonds and sesame seeds, mixed with oats, whole wheat flour, eggs and sugar. To get my kids to eat them I added chocolate chips. <br />
Wrapping them individually and putting them in the freezer has really helped me to not eat to many. Even though these have healthy ingredients, it is easy to eat too many. If you buy store bought granola bars or energy bars, it doesn't hurt to try and make your own. Your budget and family just might thank you. The Internet has a ton of energy bar recipe suggestions. <br />
Eat well, live well, and try something new today. Today is a great day to stay the course, and be steadfast in eating right.Rosiehttp://www.blogger.com/profile/00993934607583762537noreply@blogger.com0tag:blogger.com,1999:blog-3989036047554485672.post-86815431847455080312012-11-09T12:53:00.002-08:002012-11-09T12:53:45.215-08:00Pepper Jelly<div class="separator" style="clear: both; text-align: center;">

The only time I like it when my nose runs is when I'm eating something spicy. I canned a batch of pepper jelly. It is a sweet, heat combination. My favorite way to eat it is on a flax seed cracker. <br />

The cool thing about this "hot" project is that it only cost about a dollar a jar to make. I love a good deal! Friends, eat well, live well, let your nose run a little and enjoy something hot today.</div>

Our mornings can be rushed and fast paced. "Oats on the go" have been a great solution. I put in a Mason Jar:<br />
<div style="text-align: center;">
<span style="font-size: large;">cooked steel cut oats, </span></div>
<div style="text-align: center;">
<span style="font-size: large;">apples, </span></div>
<div style="text-align: center;">
<span style="font-size: large;">and milk </span></div>
<br />
This works out great for our breakfasts on the go. I am loving the plastic lids that go on top of jars, to help with no spilling. <br />
I hope this helps inspire you to not forget a healthy breakfast. Live well, eat well.<br />

My daughter was so sweet with her pig, playing doctor. When I talk about food with my kids I try to talk about balance and fueling our bodies. I keep thinking about how food is like medicine. It can fuel our bodies, protect, heal. <br />
Recently, I roasted cauliflower and broccoli with a dash of olive oil, on a high heat in the oven. It was some of the best cauliflower I've had in a long time, crisp flavorful, not mush. I added a dash of red pepper flakes for a kick.<br />

Black rice is my current favorite rice. It is a little sweet a little nutty tasting and overall great for you.
The package I got at Costco says that it is "loaded with antioxidants, vitamins E and fiber. . .one serving has as many antioxidants as a single serving of cultivated blueberries."<br />
The first three times I served it to my kids, they were very unsure, skeptical, and verbally complained that I would serve such a strange thing. They have accepted now that I'm going to keep cooking it, and now all eat it just fine.<br />
I cooked the rice with two cloves of garlic, minced. When it cooled I added, <br />
1 jalapeno<br />
1 red pepper<br />
1/2 c. corn<br />
1/2 pound ground sausage<br />
Then I served the mixture in green peppers. <br />

With the left overs, a few days later, I sauted garlic, onion and baby kale in the skillet then combined it with the rice mixture. The flavors were yummy and the rice very filling. <br />
I have had several people ask me where I get my kale. I usually get it where other greens are sold, like spinach and collards. Most recently, I noticed at Safeway, they have a baby kale in a plastic container. It worked great for the above recipe. <br />
Trying new things is intimidating for some. I know for me I have learned to like kale because of the health benefits.<br />

Motherhood is my marathon not a sprint. I have found that the more I keep to a meal schedule the smoother our days go. I must admit that I took a big break this summer from my normal meal planning. My husband noticed the hap hazard meals. He said, " I think you took a vacation, when are you coming back?" When I don't plan, I seem to have missing ingredient in the kitchen, get irritated and overall don't seem to get enough veggies into our meals.<br />
I really like to play at the beach during the summer, which is a huge distraction from a routine. I'm motivated, and ready to go now.<br />

My three goals for this school year is to:<br />
1. Pack a variety of veggies and fruits into sack lunches<br />
2. Use less plastic bags<br />
3. Stick to the menu plan<br />
<br />
Celebrating my dads birthday with fresh produce from my brothers garden, sitting around a table with a bowl full of sweet cherry tomatoes is an ideal way to end the summer.<br />

One of my personal goals for this blog is to include what I'm eating. My hope is to encourage myself to be accountable and second to give you the reader ideas.<br />
Today's menu:<br />
Breakfast: steel cut oats, raisins, coconut milk,<br />
Snack: half apple<br />
Lunch: black rice, stir fried kale, corn, zucchini with salsa<br />
Snack: carrots, almonds<br />
Dinner: whole wheat pasta, kale, green beans, sausage<br />
Dessert: peach smoothie<br />

For the past nine summers, I make pesto and freeze it for the winter. It is a tradition that is well worth the time and cash investment. The olive oil, almonds, lemon, Parmesan and fresh basil and garlic from the farmers market adds up to about 25 dollars. Basil pesto for me, has awakening properties. I feel better, think clearer, when smelling and tasting it. I put it on </div>

I'm not sure why I feel like I need to take pictures when people are eating, but, I do. We camped at Priest Lake, Idaho and it rained almost the entire time. We stayed under blue tarps to avoid the lightening and rain. What saved the trip for me is that we camped with eight other dear families and our kids had a wonderful time playing with their friends.<br />
Our next camping was on Lake Roosevelt in Washington. It was hot and this time our blue cover tent was for shade since the temperature was in the 90's.<br />

Camping and day trips take planning, team work, packing, unpacking, clean-up and much work for the parents, but my kids smiles filled with joy are worth all the work involved. We ate watermelon at the end of the sun filled day. I discovered that watermelon tastes so satisfying when you are hot. While eating dinner my kids asked me,"Why do you put so many leaves on our food?" Excellent question! I think that one, if your food looks beautiful, it tells your mind it is going to taste good. Second, fresh herbs inhance flavors and make veggies taste better.<br />

Lately, when I have been tucking my youngest daughter to bed, after prayers, she says, "For breakfast I want, a sandwhich with whip cream, and pink frosting, and sprinkles and a cherry on top." I laugh, and tell her I don't have any cherries but that sounds yummy. For me, gathering fresh herbs from the garden and sprinkling them on my food is like having a cherry on top. <br />

I never get tired of the sunsets each evening at our house. It is like the "cherry on top" at the end of they day. The pinks and oranges are so glorious, I wanted to share this photo. I attended the "Farm Chick" show in Spokane earlier this month. It is such an event that stirs me to be creative and embrace the urban farm chick that I am. Being outside, and wrapping up school has not allowed me to sit and write or take many pictures of what I've been cooking. I do know that my heart is full with thoughts of happiness;<br />
<strong><span style="font-size: large;">1) spending time with my family 2) watching my lettuce plants grow. </span></strong><br />

Last night, I ate the first of my lettuce crop that I started two months ago. Planting and eating what you grow is such a simple joy. I find it rewarding each year. The lettuce is great the spinach, not so much. It keeps bolting before I go to pick the spinach leaves. Gardening is such trial and error, like so many things in life. Today, I say, Hooray for lettuce! I went with my daughter to her field trip. We were on top of a mountain at the Chewelah Peak Learning Center. Fresh air, hiking, mountain views, huckleberry bushes, many 6th graders. All are wondrous. <br />
This green bush has light colored berries on them, soon to be dark beautiful huckleberries. On our hike we saw bear, elk, and deer tracks. Amazing.<br />

I am a forager through and through. Gathering, picking, plucking, all are tasks that I look forward to doing. In the past I have picked apples, pears, huckleberries, blueberries, strawberries, and raspberries. Pure Joy. I strongly believe that food you have gathered or grown yourself tastes sweeter.<br />
Mountain air provides me rejuvenation, life, and clarity. This last week I made a potato broccoli soup for dinner. I found that using this "Broccoli Coleslaw" in my potato soup was a great way to add some veggies. My kids thought that they were noodles, double score.<br />
I also think that potatoes and rosemary are a great pairing. I just planted some rosemary in the garden and can't wait to find more uses for it.<br />

My youngest and I were cooking up a storm and washing a lot of dishes. She has a pink scrubber that makes it fun for her to help. I think encouraging my children to see doing dishes as fun is a bonus. I know I don't seem to enjoy it very much.Rosiehttp://www.blogger.com/profile/00993934607583762537noreply@blogger.com0tag:blogger.com,1999:blog-3989036047554485672.post-84707384931649157782012-05-30T08:14:00.000-07:002012-05-30T08:14:17.924-07:00Sunsets and Light<div class="separator" style="clear: both; text-align: center;">

There is just something about the light and air at sunset. I notice the bugs in the fading light. My skin looks like a warm color, actually, everything looks like peaches, almonds, apple crisp. The trees, plants and people seem to take notice too. They take in the last few moments of sun and soak it in. <br />
It is one of my favorite parts of the day when I take time to notice the sunset. It is easy to get so consumed with doing, accomplishing daily tasks, or compaining, that the beautiful "Light" moments are missed.<br />
I keep thinking about the verse from the Bible in Psalm 119:105<br />
<div style="text-align: center;">
<strong><span style="font-size: large;">"Your Word is a lamp to guide my feet and a light for my path."</span></strong></div>
I am constantly needing light for my path. Today, I am thankful for Gods light, and direction. <br />

Longer days spent outside means that I am on the computer significantly less. As a family we wrapped up another year of Awana, and baseball season is coming to a close. The chickens and garden are starting to grow which revives my love of being outside.<br />

I have been adding chive blossoms to soup, salads and my homemade corn tortillas. This recipe is one that my mom gave to me when I first go married. It has served me well over the years. </div>

<strong><span style="font-size: x-large;">Corn Tortillas</span></strong><br />
2 large eggs<br />
1 1/1 c. corn meal<br />
1/2 c. flour<br />
2 c. milk<br />
pinch salt<br />
<br />
Beat well. The batter will be thin. Spread thin layer in lightly greased hot skillet. Flip after a few min.<br />
<br />
This time we ate them hot, right off the skillet, but many times we will fill them with all the burrito fixing's, like beans, lettuce and cheese. They also make a great side when having chili.<br />
<br />
If you are feeding a crowd, make ahead and keep in the oven on warm. It takes atleast 20 min to make all the tortillas from this recipe.Rosiehttp://www.blogger.com/profile/00993934607583762537noreply@blogger.com0
